The lean meat chosen to prepare this product comes from selected pigs. This meat, which undergoes a comprehensive control from the time it is received at our facility, is mixed with bacon, giving rise to an optimum raw material to make sausages.
Once this raw material has been prepared, it is minced and marinated following the traditional recipe, using exclusively natural ingredients, with no type of colorant or preservative. Thus, we guarantee that León da Gusto Longaniza is a totally natural product.
After the marinating process, the meat is stuffed into natural intestine, which is tied so that the resulting product forms a horseshoe shape, or sarta, as it is known. Then, the longaniza sausage is taken to our natural smoking sheds, where a first drying process is carried out, using the smoke that comes from the holm oak or oak log braziers. The product is later taken from the smoking sheds to the drying sheds, and finally it is placed in our cellars, where its curing process is completed before it is sold on the market.
This longaniza can be obtained in two varieties: sweet (white string) and spicy (red string), depending on the type of paprika used in the marinating process.

Due to its high degree of curing, it is recommended that this product be consumed raw. Sandwiches, Tapas, Teas, Platters of Cold Meats, etc. are some of its most popular applications.
