We’ll begin the presentation of this product by stating that it is made from part of the “shoulder” (front legs of the pig).
After rigorous selection of the shoulders of pork, they are boned, cut and shaped. Next, the product undergoes an elaborate soaking process, during which the meat acquires the salt and aroma which will define the end product. After soaking, the pieces are moulded, and once shaped are placed in netting to guarantee uniform, homogeneous baking, as well as maintaining their final shape.
In the next stage, the pieces are baked slowly, in a long process with several phases, until León da Gusto Baked Shoulder of Pork is achieved. Finally, the pieces are chilled for later vacuum-packing, which will preserve all their qualities.
In this way, we obtain León da Gusto Baked Shoulder of Pork with a firm consistency, a pleasant aroma, a smooth flavour and a pinkish colour, which is becoming more and more popular.
